An undercounter ice machine is the fussiest thing in this catalogue, and almost none of the fuss is refrigeration. It needs air at the grille, water at a sensible pressure, and somewhere for the water to go — and two of those three are decided by whoever plumbed it in.
The drain is where most installations go wrong. Sub-Zero’s installation guide for the UC-15I is explicit: a machine ordered without a pump drains by gravity, a drain must be installed, and a horizontal gravity drain line has to fall a quarter of an inch for every twelve inches of run. An air gap will usually be needed between the unit and the drain, and a stand pipe with a trap below it is acceptable. Water supply is quarter-inch copper, braided stainless or PEX at 20 to 80 psi, with a shut-off valve you can actually reach and no self-piercing valve anywhere in it.
Get the fall wrong and the symptom is not a plumbing complaint. It is standing water in the bin, cubes fusing into a slab, and a machine that smells before it fails.

Probably not. Sub-Zero rates one production cycle at roughly thirty minutes depending on the room and the water temperature, so a hot kitchen stretches every cycle. Add scale in the reservoir or a filter past its life and the daily total drops a long way before anything is actually broken.
Why are the cubes white and mushy rather than clear?
That is a water answer, not a cold answer. Sub-Zero specifically does not recommend softened water for an ice machine, and notes that where water is very hard, softened water can produce white, mushy cubes that stick together. Mineral scale on the machine’s own surfaces does much the same thing.
